BALOON VINE GREENS DOSAIS#MUDAKKATHAN KEERAI DOSAI#முடக்கறுத்தான் தோசை செய்வது எப்படி?


Balloon vine greens commonly termed as Modakkathan Keerai in Tamil is a pakka medicinal herb used for cough, skin diseases, menstrual cramps, constipation, arthritis and rheumatoid problems.
Scientific name: Cardiospermum halicacabum.
It has anti inflammatory and antioxidant properties. Its noticeable relief in joint pain and arthritis  and nervous breakdown suffering patients.
Like every green, it is packed with minerals calcium, iron and phosphorous. 
Our ancestors had been using this greens as medicinal herb for ages.
its every part is having medicinal value.  They introduced in cooking as modakathan keerai dosa, modakkathan keerai Thuvayal, modakathan keerai paruppu kootu, modakkathan keerai appam and so many dishes using this miraculous greens.

We are going to make the most flavourful and yummy modakkathan keerai/greens dosa 


Ingredients:

Fresh Cow ghee 2 tsp
Modakkathan green leaves one bowlfulDry Red chillies 3 pcs
Dry roasted Cumin seeds powder 3/4 tsp
Rock salt 1/4 tsp
Fresh Idli batter 4 ladlefuls 
Water 30 ml
Ghee or Groundnut oil 25 ml

Procedure:

Heat the pan on medium flame.
Add Fresh Cow Ghee 2 tsp
Saute red chillies for a second
Transfer the washed green leaves to the pan.
Saute until shrink.
Add dry roasted cumin seeds powder and Powdered Salt.
Set aside to cool down.
Grind the sauteed contents, adding little water until smooth paste.
In a vessel, add fresh Idli batter.
Transfer the ground paste.
Add 30 ml water and stir to mix well.
Add water if needed.
Dosa batter is to be set aside to ferment overnight or 6-8 hours.
Heat dosa tawa on medium flame.
Rub the tawa with a piece of onion or shallot to get smooth and nonstick dosas from tawa
Make dosas. 
Ghee or oil can be used for drizzling dosas.

Modakkathan greens dosas are ready to enjoy.

TURKEY BERRY TAMARIND GRAVY#SUNDAIKKAI KARA KUZHAMBU #சுண்டைக்காய்க் காரக் குழம்பு


Turkey berry  plant is known as Sundakkai in Tamil, scientifically termed as Solanum torvum has immense health benefits. There tiny green balls like raw fruits have wonderful medicinal properties.
The miraculous berries cure a host of digestive problems ranging from indigestion to abdominal cramps, treat the iron dificiency, keep the blood sugar levels in check and prevent the onset of heart ailments. 



Ingredients:

For grinding:

Turkey berries 250 gm
Groundnut oil 20 ml
Garlic 4 pcs
Kashmiri chillies 3 pcs
Red Chillies 2 pcs
Curry leaves 10-15 pcs
Shallots 3/4 cup
Fenugreek seeds 1/4 tsp
Dry roasted Coriander powder 1.5 tsp
Dry roasted Cumin powder 1/2 tsp
Turmeric 3/4 tsp
Tamarind one Gooseberry size 
Tomato half
Shredded Coconut 3 tbsp
Asafoetida one pinch
Dry roasted Sesame Seeds 1 tbsp
Water 3/4 cup

For tempering:

Groundnut oil 3 tbsp
Mustard seeds 3/4 tsp
Shallots 1/2 cup
Curry leaves 10-15 pcs
Fenugreek seeds 1/4 tsp
Asafoetida 2 pinches
Turmeric 1/2 tsp
Ground spice contents 
Rinsed water 2 cups+ 1 cup water
Rock Salt 1 tsp
Jaggery 1 tsp
Gingelly oil 2 tsp
Coriander greens, a fistful (optional)
