MELT IN MOUTH GULABJAMUNS/நாவூறும் குலாப் ஜாமுன்/गुलाब जमुनस









 
Gulab Jamuns are milk solid based sweet, popular in India, Nepal, Pakistan, Maldives, Mauritius, Fiji, South Africa and the Caribbean countries. Gulab jamuns are literally translated as Rose berries, Rose refers to Gulab and berries means purple coloured berries.

It is traditionally made from Khoya that is reducing milk to the consistency of a soft dough. Modern recipes of Gulab jamuns call for dried milk powder instead of khoya. It is often topped with fakes of Pistachios or Almonds with saffrons.

How can we make Lucious Gulab jamuns at home?

  • Before we are going to prepare, the important tips and tricks we should go through.
  • The dough should be firm and soft but pliable and should not feel dry. If it dry, add little milk to work the dough again to form no crack balls.
  • We should heat the ghee or oil or oil+ghee on medium flame till a bit of dough dropped in comes up at once, Then the heat is reduced to the low level. Maintain the low-medium heat, we should deep fry the dough balls.
  • We should make sticky sugar syrup.
  • Once the syrup is ready.  switch off the flame.
  • Once the fried balls take out and collected on a dry plate we have to wait for five seconds and drench all the balls into the sugar syrup.
  • We need not reheat it again.
  • Allow soaking in sugar syrup for an hour and serve. 
Ingredients:

Semolina 1 tbsp
Water  1 tbsp
Milk powder (Nestle)  one bowl/200 gm
All-purpose flour/Maida 1 tbsp
Baking powder 1/2 tsp
Homemade butter at room temperature one tbsp
Boiled milk at room temperature 3 tbsp
OIl/Ghee to deep fry
Sugar 450 gms
Water 2.5 cups
Cardamoms 4-5 pcs
Saffron one pinch optional
Half lemon

Procedure:

Step one:

Soak Semolina with one tbsp water.
Set aside for 10 minutes
Mix the milk powder, All-purpose flour and baking powder in a dry mixing bowl.
Mix well to combine.
Add butter and mix to crumble.
Transfer the soaked Rava paste to the mixture.
Combine.
Add milk a little by little while kneading.
We have to very careful in adding the milk.
We should add milk until soft pliable dough.
Once we attained soft dough, stop adding the milk.
Keep covered for 10 minutes.
Make grapefruit-like balls and place them on a dry plate.

Step Two:

Heat the vessel containing sugar and water on high flame.
Bring to boil until sticky sugar syrup.
Add cardamoms split to the syrup.
We may opt for saffrons one pinch in this stage.
Squeeze lemon juice and stir to combine.
Switch off the flame and set aside ready.

Step Three:

Heat the oil or ghee or oil+ghee mixture to a deep-fry temperature.
Check the oil temperature by dropping a small bit dough.
If it rises to the top, reduce the heat to low-medium
Lower all the balls one by one carefully in hot oil.
Allow frying until golden brown.
Drain the oil and collect them on a dry plate.
Wait for five seconds only.

Step Four:

Lower the fried balls into the hot sugar syrup.
No need to reheat the syrup with balls again.
Let the balls soaked for one hour.

Transfer some balls in a glass bowl.
Garnish with Almond flakes.
Drizzle with the remaining sugar syrup

Ready to serve hot/cool/room temperature.
Enjoy the Luscious dessert!

CHOCO MUG CAKE/சாக்லேட் மக் கேக்/चॉकलेट मग केक





This cake has a perfect softness and sponginess texture; single-serving mug cake; very easy to make; we will need only one coffee/Tea mug
to do the whole preparation and cooking process. 

When our Refridgerator is out of eggs, but our sweet tooth is craving for delicious cake especially chocolate cake, this mug cake come in handy.
We can cook this cake just in one minute. The process takes less than 5 minutes to prepare and one minute for cooking. we can relish absolutely delicious choco cake whenever we crave for. Technically we say this cake is eggless, no-bake one. Cutting our prolonged preparation and baking time to just one minute to get a supremely yummy cake. No more heating waves in the kitchen! Hence it is best suited for these hot summer days.

Moreover, This super-fast yummy mug cake pairs with ice cream, and quick-easy dinner meal during family occasions and get-togethers.  

Step  one

Ingredients:

All-purpose flour/Maida 3 tsp full
Sugar powdered 1 tsp full
Cocoa powder 1 tsp full
Baking powder 1/4 tsp full
Boiled milk 4 tsp+ 5 tsp
Melted ghee 1 tsp
Vanilla essence  4-6 drops

Step two

Procedure:

In a dry coffee/Tea mug, add all-purpose flour, powdered sugar, cocoa powder and baking powder.
Mix well using a fork.
Then, add wet ingredients i.e. milk. ghee, vanilla essence.
Mix to combine.
Add some more milk (one tsp by one tsp) to loosen the mixture and blend well until the desired cake batter consistency.
Wipe off the sides of the cup.
Make sure, the batter should be half level of the mug.
Place it on the turntable.
Close door.
Click the microwave option.
Set the one-minute temperature.
Start cooking.
When the oven beeps, Switch off the microwave oven.
Take out the mug carefully.
Place it on a table.
Sprinkle powdered sugar.
Pour the Chocolate syrup to make it moist and rich chocolaty.
Enjoy.
We can cook four to six mugs at a time right in a microwave oven in a jiffy.

BADAM KHEER/ALMOND KHEER/RABADI/பாதாம் பாயசம்



Just greet your dearest friends and lovable relatives with this irresistible Almond Kheer. This is one of the most delicious desserts across all the states of India. For any special occasions like wedding, marriage parties loved ones' Birthday Celebrations, Family get-together or friends meet, Almond kheer is a must and the most loved drink by all. 

Kheer is widely known as Payas/Payesh in Northern states of India whereas it is known as Payasam in Tamilnadu.

The kheer can be served hot/warm or chilled. 

Cooking Time 45 minutes 

Yield:  four servings

Ingredients:

Almonds 100 gm
Boiling water as needed for soaking.
Fresh cow milk 750 ml
Cold milk 50 ml
Cardamom seeds crushed 1/2 tsp
Saffron strands 15-25 pcs {not mandatory}
Sugar 200 gms
Cashew flakes 2 tbsps
Raisins 15-20 pcs
Fresh Cow ghee 2 tbsps

Procedure:

Soak almonds in boiled water for 30 minutes.
Blanch the outer skin and keep ready to grind.
Bring to boil 750 ml of fresh cow milk on medium heat.
Lower the flame and let boil until the milk reduced to 500 ml.
Keep on stirring.
Add saffron strands
Add 200 gm sugar. Once the milk reduced to 500 ml, 
add fried-cashew flakes and raisins in fresh ghee.
Add freshly crushed cardamom seeds 1/2 tsp and stir to infuse the flavour.
Done.
Turn off the heat.
Almond kheer is ready to enjoy.

சிவப்பு அவல் வெல்லப் பொங்கல்/RED BEATEN RICE SWEET PONGAL/RED POHA SWEET PONGAL


Red Poha/Red Beaten Rice/Red flattened Rice/சிவப்பு அவல் is one of the healthiest options, packed with iron and vitamin B and other important minerals that are needed to our body health.
It is more trending now across India. Red Poha/Aval is made from red rice. The red colour of the rice is due to the presence of pigment, Anthocyanin which is also a flavonoid. The bran layer remains intact in Red Poha/Aval/Red Beaten Rice, while processing. This bran contains rich fibres, Vitamin B and minerals such as calcium, manganese, zinc, iron,  magnesium and other antioxidants that help in fighting free radicals thereby preventing cancer.

Red Beaten Rice Jaggery Pongal/Sivappu Aval Vella Pongal/Red Poha sweet Pongal can be easily made in quick-fix mode.

Ingredients:

Red Poha/Red Beaten Rice/Red Flattened Rice/Red Poha/Sivappu Aval 200 g
Water 3.5 cups
Organic Jaggery 250 gm
Fresh Desi Ghee/Cow ghee/Clarified Butter 4 tbsp+1 tsp
Raisins 10 pcs
Whole Cashews 15 pcs
A mustard size Edible Camphor
Freshly crushed Cardamom seeds 1/2 tsp

Procedure:

Dry roast the red Poha/Beaten rice/Aval on medium heat for 2 minutes.
Bring 3.5 cups water to a rolling boil with one tsp ghee.
Once water gets boiled, add dry roasted Poha/Aval/Red beaten rice and stir to combine.
Let the red Poha/Beaten rice/Aval cooked soft and entire water utilized for cooking.
Now add roughly crushed jaggery and stir to melt and dissolve.
Once jaggery blended with aval/Poha, add fried cashews, raisins. Add 2 tbsp ghee again.
Add crushed cardamom seeds and a mustard sized edible camphor.
Mix well to combine on low heat for 5 seconds.
Turn off the heat.

Ready to serve/offer/enjoy

Cooking Time 10 minutes
Yield: 4 servings.

அவல் கேசரி/AVAL KAESARI/POHA SHEERA/BEATEN RICE SWEET



Aval kaesari is an easy to make delicacy that can be served as offering during festival celebrations or family get together or any other auspicious family occasions.

Ingredients we need:

Aval/Poha/Beaten rice 200 g
Sugar 175 g
Fresh Ghee 4 tbsps
Freshly cardamom seeds crushed 8 pods
Edible camphor a tiny bit crushed
Raisins 10 pcs
Broken Cashews 20 pcs
Saffron strands 8 pcs
Water 500 ml

Procedure:

Dry roast Aval/Beaten rice/Poha
for 5 minutes on medium heat.
Set aside to cool down.
Grind to a coarse textured powder (Rava texture)
Bring water to a rolling boil on medium heat.
Add one tbsp ghee, kaesar powder and saffron strands.

Once the water starts boiling, add poha powder keeping on stirring constantly.
Let the powder cooked soft.
Add sugar and fold several times to combine.
Add 2 tbsps ghee and cook all the ingredients combine and non sticky on low heat.
Fry the cashews and raisins in one tbsp ghee until golden brown in a separate tempering pan.
Transfer the fried  ingredients to cooked poha.
Fold to incorporate.
Final touch of adding flavour is the sprinkling of cardamom seeds powder to be given.

Poha kaesari is ready to be served.

GHEE MYSORE PAK











Mysore Pak is one of the most tempting sweets that Karnataka tradition had offered to us. It has the rich aroma of ghee and soothing taste. The amazing fusion of sugar, loads of fresh cow ghee/Desi ghee and besan flour gives rich aromatic and delicious dessert. There are many delicious twists in Tamilnadu such as Ghee Mysore Pak, Almond Mysore Paks, Dates Mysore paks,  Kaju or Cashew Mysore Pak,  Milk Mysore Pak, Carrot Mysore Pak etc. Out of these heavenly Mysore Pak varieties, we are presenting here how to make homemade Ghee Mysore Pak in a quick and easy way to satiate your sweet cravings.

Ingredients:

Only 3 ingredients..

Fresh Cow ghee  500 ml
Besan flour 250 gms
Sugar 500 gms. 

Procedure:

Melt the ghee in low flame.
Roast the Besan flour in 2 tbsp ghee on low heat.
Transfer the roasted besan flour to the dry mixing bowl.
Add 250 ml ghee and blend well.
Set aside.
Heat the sugar with one cup of water on medium heat 
Bring to boil until the one string consistency achieved.
Add 2 tbsp ghee to the sugar syrup and mix to combine.
Reduce the heat to a low level.
Now add the ghee-besan mixture to the syrup
Give consistent stirs to combine on low heat.
Add ghee little by little in between and keep on stirring.
Watch the bubbling on low heat and keep on stirring.
Meanwhile, apply a little ghee on the tray.
Once the mixture cooked nonsticky and smooth, Add the remaining ghee and stir to combine.
Transfer the mixture to the tray.
Level the surface.
Wait for 15 minutes.
Cut into rectangular pieces or desired shapes you like.
Store it in an airtight container for 5 days 
Enjoy!

Yield 30 Mysore Paks.

MELT IN MOUTH CARROT KAESARI



Are you craving for absolutely delicious sweet in this season
Then, choose this sweet to try out!
There are So many variations. This is one of the variations of kaesari calls in for Super veggie, Carrot making it as more relishable and natural and pure. While you doing this, you will get amazed about its crumbly and ultimately soft and melt-in-mouth texture. You cannot stop with one bowl. more and more, you want!

This is easy to make at home! You can do this within a few minutes.

How to make?

Ingredients needed:

Fresh Carrots 150 gms or two
Semolina 75 gms
Sugar 100 gms
Fresh cow ghee 75 ml
Cardamom pods 9 pcs
Whole cashews 8-10 pcs
Raisins 115-20 pcs
Edible camphor a tiny bit
Saffron strands 10-15 pcs optional

Procedure:

Wash the carrots thoroughly.
Peel off the carrots
Shred the carrots into fine flakes.
Grind it with 5ml water to a fine pulp
Roast Semolina in 2 tbsps ghee until creamy texture.
Set aside.
Bring to boil 250 ml water with one tsp ghee in a pan on medium heat.
Once the water starts to boil add roasted semolina little by little keeping on stirs.
Let semolina to cook well and absorbed water entirely.
Add one tsp ghee and stir.
Now add carrot pulp and mix to combine.
Add sugar and stir well to dissolve and concentrate on medium heat.
This will take 1 minute.
Pour 25 ml ghee and mix to combine.
Add crushed cardamom seeds.
In another pan, add 3 tbsps ghee and fry whole cashew nuts and raisins until golden brown.
Transfer the cooked carrot-Semolina contents to the frying pan and mix to combine.
Add saffron strands optionally
Let the contents cook until nonsticky
Ready to serve.
